Harvested fruit arrived at the winery on the 20th of April 2005. After 2 weeks of maceration, the wine was pressed, and underwent MLF. Twelve months of aging in new French oak has softened the tannins, and given a full rich complexity to the flavours.
Tasting Note:
The 2005 Highland Merlot has been aged in new French oak, allowed to rest for in excess of a year after bottling. The fruit is unquestionably Merlot. It has the glaze of Satsuma and the finish of a Victorian painting. The bouquet is plum and leather with generous ripe tannins and blueberry on the palate. There is a rarity factor (only 280 dozen produced) and there is age behind it.
