Harvested on the 21st and 22nd of April 2007. 2 weeks of maceration, then Malolactic Fermentation. 10 - 12 months of ageing in French and American oak has softened the tannins, and given a full rich complexity.
Tasting Note:
Rich and dark, the 2007 Ohiti Estate Cabernet Sauvignon is full of wild blackberry, cassis and oak, molded by supple tannins and ripe nuances. It has an X - factor, a touch of class, which only surfaces when red wine has had time in oak and careful handling - it has been nurtured!
